Best Fall Recipe - Pumpkin Cookies!

With Thanksgiving having just passed, I can’t help but feel so grateful for the amazing family and friends I have in my life. It’s a great time of year to reflect upon the past year and to make note of all we have to be thankful for. One of my favorite things about Thanksgiving is eating all of my favorite foods with all of my favorite people.

Is anyone else obsessed with pumpkin around this time of year?! One of the BEST fall desserts to make are Pumpkin Cookies! The cookies are so flavorful and perfect with a decadent cream cheese frosting. Need I say anything more?

Keep reading to learn how to make the best pumpkin cookies that will ever meet your taste buds…

Here’s everything you’ll need to make the cookies!

Cookie Ingredients:

  • 4 cups of flour

  • 2 cups of oatmeal

  • 1 tsp of baking soda

  • 1 tsp of nutmeg

  • 1 tsp of salt

  • 1/2 cup of softened margarine

  • 2 1/2 cups of brown sugar

  • 2 eggs

  • 1 tsp of vanilla

  • 1 1/2 cups of pumpkin puree


Icing Ingredients:

  • 8 oz of cream cheese

  • 1 1/2 tsp vanilla

  • 3/4 stick of butter

  • 1 tbsp milk

  • 1 3/4 cup of powdered sugar

Now let’s get started!

  1. Preheat the oven to 350 degrees

  2. Combine all dry ingredients into a large sized bowl. (Oatmeal, flour, baking soda, nutmeg, salt, brown sugar)

  3. In a medium bowl, cream together all of the wet ingredients from the cookie ingredient list. (margarine, eggs, vanilla and pumpkin puree)

  4. Slowly combine the dry ingredients into the wet ingredients bowl while whisking them together with hand mixer.

  5. Next, take a spoonful of the batter and make 1/2 inch cookie shapes or to your desired cookie size. The cookies will expand significantly when baking!

  6. Place the cookies in the oven for 10 - 12 minutes

  7. While the cookies are baking, combine all the ingredients from the icing ingredients and mix together with hand mixer (cream cheese, vanilla, butter, milk, powdered sugar)

PRO TIP: Take out the cream cheese when you begin baking the cookies to soften, when cookies are in the oven, place it on a plate and put it in the microwave for 30 seconds to help soften!

When the timer goes off, take out the cookies and frost them and voila!! The BEST pumpkin cookies you will have ever tried. I promise ;)
