With the holiday season around the corner, it's tough to stay on track with desserts lurking at every corner! I love to indulge with my family and friends, but when I am trying to stay on track with my health and fitness goals, these energy bites are a lifesaver. They are perfect for hanging out at home, or when you are running out the door! I found the original recipe on Pinterest (link to the recipe is below), but now that I have made them several times, I like to make my own variations of it!
1 Cup of old fashioned oats
1/3 Cup of honey
1/2 Cup of peanut butter
1/2 cup of ground flax seed (regular flax seed works too!)
1/2 cup of chocolate chips
1 tablespoon of chia seeds
1 teaspoon of vanilla extract
Mix all the ingredients together and chill them in the fridge. After about a half hour, roll them into balls and let them chill again. Once they've been in the fridge for another half hour they are ready to eat!
I've seen so many different variations of energy bites on Pinterest, but one of my favorite ways to change up the recipe is by adding my favorite protein powder to the mix. This helps me make sure I am getting enough protein and makes it a great pre-workout snack!
